I know it doesn't really answer your question but you should get your user to do it the other way round.
That means setting up his gmail account to fetch (imap) the mails from the Zimbra account.
Even if you manage to ARC sign or add headers, you won't do SRS (because Zimbra doesn't do this).
The forwarded emails coming from SPF "signed" domains will be refused by gmail anyway.
