If the user's POP3 client did not have an option to leave emails on the server, and if the user was not backing his laptop up, then his email is lost.
Zimbra does not copy whole emails into the Zimbra log files.
If you Network Edition, you might be able to recover recently deleted emails from the Trash and the Dumpster (if you turned it on). You might also be able to recover some emails from the existing backups.
But if you have FOSS (please, please please in future always post the output of "zmcontrol -v"), I'm not seeing that you can recover anything other than what may be in the Trash.
Not trying to be snarky, but this is why we strongly discourage POP3 use.
